AFSCoE will be responsible for collating information obtained in other work
packages and integrating that knowledge into a form which can be used to
assist in developing effective food safety management strategies and to
support food safety management decisions. AFSCoE will also contribute with
expertice in processing of beef and lamb.
Key persons for PathogenCombat
Dr Tom Ross (involved in WP14, WP15) is widely regarded as
an international expert in predictive modelling of microbial behaviour in
foods and has made very significant contributions to national and
international risk assessments, including those organised by WHO/FAO to
inform the Codex Committee on Food Hygiene and member states.
Professor Tom McMeekin (Leader of WP14, involved in WP15)
is Co-Director of the Australian Food Safety Centre of Excellence and has
>30 years experience in food microbiology with particular interests in
microbial physiology and ecology (particularly predictive microbiology).
Their combined expertise will be used to integrate data gained from other
WPs into a risk assessment framework and to develop new methods of risk
assessment, including the refinement of predictive microbiology models. The
expertice also covers processing of beef and lamb.
