8. October 2009: Assessment of Food Safety Management Systems

Food safety is of fundamental importance to the European consumer, the food industry and the economy. The impact on trade and competitiveness is very substantial. Despite significant investment, the incidence of food derived diseases still increases in the EU.
The EU FP6 project „PathogenCombat“ attacks this pan-European problem through a holistic, multidisciplinary approach towards threats from new/emerging pathogens in the entire food chain. The impact in Europe of PathogenCombat with 44 Partners from 17 countries is bound to be very significant. PathogenCombat will contribute strongly to improve the effectiveness and uniformity in reducing the prevalence of foodborne pathogens in European food.

 

Objectives

Overall, this workshop will give insight in factors influencing the performance of your company specific FSMS.

In more detail, participants will learn about:

  • Criteria for choosing (commercial) QA standard suitable for your company
  • Current status of (commercial) QA standards and their similarity/differences
  • Basic principles and definitions regarding Food Safety Management System

Principles of diagnostic instrument:

  • How to use it as a tool for self assessment of the implemented FSMS 
  • How to interpret the outcome of the self assessment

Principle of protocol for Micro-biological Assessment Scheme (MAS) 

  • How to use the MAS in practice, 
  • How to interpret data from MAS analysis

Lectures are combined with case studies, and there is a possibility to do a self assessment of your FSMS instrument during the workshop!

QA or QC managers, quality responsible of SME´s or industrial companies in different food (Processing) sectors (meat, vegetable, dairy, among others)
